Smashin’ Shrooms

8 oz bacon, diced
4oz cream cheese
½ c sweet onion
¼ c grated Parmesan
1 clove onion, minced
16 oz mushrooms

Preheat oven to 350 degrees. I used kitchen shears to chop up raw bacon. Saute bacon in pan on medium heat. Meanwhile, remove stems from mushrooms and chop into little pieces. Line caps in pan. Remove bacon and leave a Tbsp or two of bacon grease in pan, drain the rest. Cook onion in grease until soft. Add mushroom stem pieces and garlic. Cook a couple more minutes. Reduce heat to low. Add cream cheese and Parmesan until melted. Add cooked bacon crumbs and mix well. Generously stuff mushrooms and bake until mushrooms are soft and filling it hot. About 20 minutes. Yum!
